Friday Favorites

Happy Friday, and if you're celebrating today, then Happy Cinco de Mayo! Considering I've lived in Texas for most of my life and don't travel too often, I'm not really sure if Cinco de Mayo is big in other states. Most people think that it's Mexican Independence Day, but it's actually a celebration due to the Mexican victory in the Battle of Puebla against the French. (I teach 6th grade social studies; I know things, y'all!)

Here in Texas, people do it up big! A few years ago the 5th fell on a school night, and my neighbors behind us were up partying in their backyard til 2 a.m. After repeated requests to turn off their music were ignored, I drove over in my bathrobe and was not such a friendly neighbor - see the meme below!


Since the weather is becoming more summer-esque, I thought I'd share my five favorite recipes to make for any fiesta you have coming your way! 

1) Homemade Salsa


This was my very first recipe to share on A Gal Named Al, and it's definitely a fan favorite! My mom started making this years ago, and I tweaked it to make it just right. Check it out HERE!

5) Sopapilla Cheesecake Bars

My most requested dessert is a take on Pillsbury's Sopapilla Cheesecake Bars. They are to die for! Even if you don't like cheesecake, you'll eat more than just one of these bad boys. Check them out HERE!

We're catching a little bit of a break this weekend with just one early morning baseball game tomorrow and then a trip to Ms. Astoria's to get a summer haircut! Robert is taking his final Calculus exam before starting on a Master's program, so I'm planning on surprising him with Andrea's biscuits and gravy casserole on Sunday morning.     1. I just learned to like breakfast tacos- I love them with potatoes and cheese! I could eat chips and salsa all of the time!

  3. I haven't decided where I'm eating yet tonight but those pictures have me ready for Mexican. I have lived in Texas for 5 years now & I've still never been to a Torchys!!

    1. It took me a while to try Torchy's because it was an Austin based place, and Aggies try to stay away from anything TU related! But the prices are great and the tacos are awesome!

  7. Oh my word! All of the food you posted looks amazing! I'm hoping the Atlanta airport has some good Mexican food, as that's where we'll be spending a good chunk of our day! Enjoy your weekend! :)

  13. I think Cinco de Mayo is a "thing" everywhere, not just Texas😉 I managed to get my hands on some chips and queso after Baccalaureate yesterday. YUMMM-O. Have a great weekend!!!!
