What's Up Wednesday: May 2017

Happy Wednesday! Thanks for joining me today as I link up with Mel, Sheaffer, and Shay to wrap-up May! My summer is so close - about 24 more hours! Make sure you link-up to share what's been going on in your world!


What we're eating this week...
I'm loving my Instant Pot! I made French dip sandwiches on Sunday night and a whole rotisserie chicken on Monday. Tomorrow, I'm sharing my new favorite summer side, BLT pasta salad! Make sure you link-up with me tomorrow to share your favorite recipe of the week! 


What I'm reminiscing about...
The triplets that I grew up babysitting just turned 18 and are headed off to college! I've known them since they were toddlers buying ICEE pops from me at the neighborhood swimming pool snack bar, so it's crazy that they're actually adults now!


What I'm loving...
I love following bakers on Instagram, especially The White Flower Cake Shoppe's feed. Check them out HERE!


What we've been up to...
We're officially back in the pool for the next few months! I'm SO behind on my magazine subscriptions, so it has been nice to catch up on my reads in my chair.


What I'm dreading...
Tomorrow is my last day of work at my school. I'm so excited for my next venture, but it is definitely going to be hard to say goodbye to everyone. 


What I'm working on...
I'm relearning my American history curriculum as I'm moving back to teaching 8th grade! It's been 4 years, so I've got some reading to do! 


What I'm excited about...
SUMMER! This is the first summer in years that I'm not going to be working. I'm excited to take the kids to their swim practices, go on long evening walks, play at the playground, hang out in the pool, and just have fun! 


What I'm reading...
I just started reading The Train to Crystal City about the internment camps in America during WWII for my social studies book club. It's a topic that is very rarely talked about in history books, but I always made it a point to teach about it in my classes. I think it is so important for kids to know that our country has done both great things and terrible things, and no matter what, we need to learn from our past to create a better future. 


What I'm listening to...
My favorite Pandora station lately has been the 60s, 70s, and 80s Hits Radio station. It's a great mix of classic rock and Motown which is exactly what I grew up on. 


What I'm wearing...
Socks to bed! I've NEVER been one to wear them, and for some reason my feet have been freezing lately. Ok, that was really boring, so the more interesting answer is that I have had the hardest time finding white jeans, so I gave up and got THESE white shorts from the Old Navy sale last week. 


What we're doing this weekend...
We're wrapping up Ari's last baseball game and checking off another swim meet. I will FINALLY be on summer break, too!


What I'm looking forward to...
I took 3 weeks off of working out and worrying about staying within my calorie count, and it was awesome! But, I'm actually missing my workouts, so I'm looking forward to getting back into my workout routine starting this weekend. I also love getting to go on long walks with Robert and the kids in the summer. We often go on a morning walk to a neighborhood playground and then go on another family walk in the evening. What else is new...
The kids and I have a summer schedule that we follow most weekdays that includes an afternoon movie/rest time when it's just way too hot to be in the pool. Trip has been loving some of the kid movies of the 90s lately. Do you have any suggestions for funny family or kid movies for us to add to our list? 


Question of the month: What is your favorite vacation spot? 
This is a cheesy answer, but I'd say anywhere with my family! We really don't travel much due to our 2 teacher incomes, but we like to visit fun places around town and just outside of Houston. My dream vacation would be a week at the beach, but for now, I'll take the days of family bonding! :) You can read more about our favorite family trip to Dallas HERE

  1. I can't wait for that recipe! I' have a standard pasta salad that I always make when we grill and I'm getting kind of sick of it. Every summer I tell myself I picked the wrong career and should have been a teacher. Then I remember that as much as I love kids and the subjects, I wouldn't last a week dealing with parents. I hope you have the most fun and relaxing summer!

    1. It is sad, but my kids are coming to work with me tomorrow since Robert starts summer school, so it'll be nice to have them there with me and my students are excited to spend time with them. Ari has had a countdown going because she can't wait to be with the big kids!

    1. We've had half days this week, so it's nice to go home after work and get in the pool. Definitely looking forward to doing that full time for 2 months!

  5. Dang. I totally missed that it was What's Up Wednesday. Good luck saying your good bye's today. I know it will be bitter sweet, but I'm seriously so excited for your new job and getting to actually have a summer break. That's the best!!!

    1. My aunt was the same way. I finally gave in, and it was scary at first, but it worked perfectly, and everything has turned out great so far. Definitely worth the investment!

  7. Gotta watch The Mighty Ducks! Girl, I'm loving this What's Up post because of many reasons but mainly because you get to enjoy this summer sans work!!! If you were closer I think we could enjoy some hang time and the kids would have a blast too! (Note: I need an instapot!)

  9. Yay for 8th grade! It's the best!! I'm going to have to check out some of those cakes. I could could sit all day and watch people baking. It's so soothing and inspiring to me!

    1. I am excited! One of my kids who I had in 6th grade is leaving for high school and came by to see me today- it was so sweet! I love watching the cake videos- so amazing. I don't really make any Instagram stories, but I like watching the baker ones.

    I too used to fear the white jeans....until last year. The Modern Skinny Jeans from Loft are amazing. The sales woman told me to "trust her and try them" and she was right.

    1. Thanks for the suggestion! I've had a few people tell me that they love the Loft for jeans now, but I can't justify spending $80 on jeans (or $40 for the sales). Hoping TJ Maxx or Marshalls will magically have a pair waiting for me one day! :)
