Ladies Who Link: Summer Time

Hi! Thanks for joining me today as I link up with my friends at Pink Lady, Mommy In A Nutshell, Coast to Coast, and Moms' Coffee Date! We're sharing about our summer plans and our favorite activities and recipes of the season. Make sure you link-up below to share your favorites!

June is already halfway over which means swim team is almost done! Hallelujah!

I'm going to be taking care of as many doctors' appointments as I can in the next few weeks, and we'll pretty much lounge around the house. I wrote about our summer schedule and ways that I keep the kids entertained in yesterday's post

We're looking forward to celebrating the 4th of July in our neighborhood. The kids decorate their bikes and ride in a parade behind fire trucks and then enjoy snow-cones at the park. We will most likely hit up the James Coney Island hot dog deal for lunch, enjoy some swim time at our pool, and then load up in the Jeep to watch fireworks at our nearby golf course! I have hosted a gathering on the 4th the past few years, but I'm officially retired from that gig and am looking forward to having a laid back day and no extra cleaning!

Later that week, I will be putting on my hostess hat but won't be creating anything Pin-worthy. Trip is having his 8th birthday party and has given permission for it to be a no-frills and all fun boy party. I love to plan a party, make invitations, plan menus, etc., but I am thrilled to do something low-key this year! You can read about Trip's 7th birthday party HERE!

At the end of July, we're packing up and heading to St. Louis to visit my aunts, uncles, and cousins. We're super excited, and Robert will get to redeem his birthday present and see Guns N Roses in concert while we're there!

Other than the fun that comes with the season, summer is such a great time for one of my favorite activities - eating! I promised Robert that I would make fresh salsa each week for the rest of summer. My salsa recipe is tried and true, and it is a thousand times better than any jarred salsa from the store. Get the recipe HERE!

This season also brings lots of BBQs and pool parties. A super easy but delicious side to bring to any party is a BLT pasta salad. Even the pickiest eaters will enjoy it! Check out the recipe HERE!

To finish off a summer meal, you have to have something sweet. THIS peach and cherry cobbler served with vanilla ice cream is the perfect ending to a poolside picnic!

Thanks for joining us today! Tell me what you're most excited to do this summer, and for sure send me your favorite recipes. I love all of the extra time I'm able to spend in my kitchen and would love to try out some new dishes! Make sure you join us again in July to share your travel tips and vacation suggestions. See you back here tomorrow for Friday Favorites!

  1. So do you get to go to Guns N Roses with Robert? I hope so- how fun! Too funny about Trip's Bday! I am doing the same thing for Diana's this summer- I usually go all out and host a major bash with lots of Pinterest-Worth details but this year, we are doing pizza and cake with a small group of girls and then heading to Canobie Lake Park (a local amusement park). Looking forward to not having to fuss!

    1. No- I'm skipping out on the concert- I'm not their biggest fan, but he'll go with my uncle and cousin. Trip is still picking out a Pinteresty cake, so at least I'll still have that to work towards!

    1. I hope you like it! If I knew how to do canning, I would definitely can my own. My grocery store has sweet potato chips, and they are awesome with salsa!

  3. I can't believe swim team is almost over for y'all. Our summer teams started in May and went til' the 3rd week of August so no one could go on vacation until it was over. (on a side note...did y'all watch the summer Olympics last year? Townley Haas was on our summer swim team, so it was super exciting for us) Thank heavens for boys and a no frills party. It's crazy how much easier they are when it comes to most things than girls. That's why I like having both. The best of both worlds.

    1. I don't remember him, but then again Lochte and his nonsense kind of ruined swimming this year! I'm getting messages right now about being the tent mom for divisionals this weekend, and I'm saying NO! I've done way more than my required hours, and I'm DONE!

  4. OMG! Guns and Roses! How fun!! I hope Axl doesn't get pissed and walk of the stage. You know he's done that in the past, right?! I'm sure you guys will have a blast, tho! I've really got to try your salsa recipe! It looks great!

    1. Too funny, Laura- my aunt texted me the night before Robert's birthday about getting tickets. I originally said no because when they came to Houston, tickets were hundreds of dollars a piece! When we looked them up for STL, they were much cheaper. Turns out they started a riot there years ago and were banned from the city for decades! Hoping Robert makes it out of the concert alive! :)

    1. Love that song, too! I'm going to be sitting out of the concert to have craft night with my aunt and am sending Robert with my uncle and cousin. I like GNR, but I'm not their biggest fan. We were hoping Def Leppard would swing through Houston this summer, but we're going to have to wait another year.
