June is already halfway over which means swim team is almost done! Hallelujah!
I'm going to be taking care of as many doctors' appointments as I can in the next few weeks, and we'll pretty much lounge around the house. I wrote about our summer schedule and ways that I keep the kids entertained in yesterday's post.
We're looking forward to celebrating the 4th of July in our neighborhood. The kids decorate their bikes and ride in a parade behind fire trucks and then enjoy snow-cones at the park. We will most likely hit up the James Coney Island hot dog deal for lunch, enjoy some swim time at our pool, and then load up in the Jeep to watch fireworks at our nearby golf course! I have hosted a gathering on the 4th the past few years, but I'm officially retired from that gig and am looking forward to having a laid back day and no extra cleaning!
Later that week, I will be putting on my hostess hat but won't be creating anything Pin-worthy. Trip is having his 8th birthday party and has given permission for it to be a no-frills and all fun boy party. I love to plan a party, make invitations, plan menus, etc., but I am thrilled to do something low-key this year! You can read about Trip's 7th birthday party HERE!
At the end of July, we're packing up and heading to St. Louis to visit my aunts, uncles, and cousins. We're super excited, and Robert will get to redeem his birthday present and see Guns N Roses in concert while we're there!
Other than the fun that comes with the season, summer is such a great time for one of my favorite activities - eating! I promised Robert that I would make fresh salsa each week for the rest of summer. My salsa recipe is tried and true, and it is a thousand times better than any jarred salsa from the store. This season also brings lots of BBQs and pool parties. A super easy but delicious side to bring to any party is a BLT pasta salad. Even the pickiest eaters will enjoy it! Check out the recipe HERE!
To finish off a summer meal, you have to have something sweet. THIS peach and cherry cobbler served with vanilla ice cream is the perfect ending to a poolside picnic!
