Friday Favorites

Happy Friday, friends! I had planned for this week to be a little insane with it being the first week back to school, but  when the entire week was cancelled due to this hurricane, it was truly bananas! I know Laura at The Horton Family has said that she and her hubby love to have appetizer nights, and Robert and I are the same way. You can totally make a meal out of dips or sides, and comfort food is a must-have after a crazy week. These are my picks for a fun food-filled weekend:

1) Homemade salsa

Chips and salsa are the perfect way to get the weekend party started on a Friday night! Fresh salsa is always better than jarred, and my version is super easy to make. Check it out HERE!

2) Torchy's queso

You can't have salsa without some queso! Once you add queso to the mix, you basically have a full meal, and I know that Robert and I are stuffed before the meal even comes out when we've split an order of queso. Try THIS yummy recipe ASAP!

3) Easy microwave baked potatoes

If you're wanting something a little more substantial than chips but aren't wanting to cook a full on meal, then you definitely need to try Chrissy Teigen's microwave baked potatoes! You can load them up with bacon or throw some leftover shredded beef on top to bulk them up.

4) Chocolate chip cookies

Last year, I got into the habit of baking on Sundays to have a treat for the week, but I think I want to bake something fun on Fridays to celebrate the end of the work week instead. Chocolate chip cookies are easy and sure to please everyone in the house!

5) French toast bake

If you want to enjoy a scrumptious breakfast on Saturday morning but don't want to spend an hour over the stove in the morning, then a make-ahead breakfast bake is just what the doctor ordered. Try out THIS French toast bake to keep everyone in your home full and happy!

We are still waiting for an announcement later today on when we will start back to school. We are beyond lucky and feel so fortunate to have stayed safe during the storm. A friend of mine added me to a Facebook group that has teachers and families across the state posting videos of themselves reading children's books for kids and classrooms that may have lost all of their books in the flood and to help entertain kids who are stuck in shelters. Ari and I are planning on making our own video to add to the site later today. She is so excited, and I have to give major kudos to whatever creative person came up with this idea. I hope you and your families have a relaxing and safe weekend, and I'll see you back here on Monday!

  4. Bailey thinks they will start college on Tuesday which is kind of crazy since they are housing evacuees but I know to make it count you need to start at the collegiate level! I love that you are making a video, they should all be added to a website :). Xoxo ERIN

  6. I am so hungry now! All of this looks so yummy. Confession, places up here in the North hardly ever have queso...that looks so yummy and I will have to try that recipe. It is really rare to eat it up here.
